Hawaii is a foodie's paradise. There's no other way to say it. You'll find roadside fruit stands boasting smoothies, popsicles, and baked goods filled with local tropical fruits like strawberry, mango and pineapple. Local organic farms host a variety of tours where you can sample luscious sugarcane treats with a fresh squeeze of lime, prepare your own fresh coconut milk and indulge in a myriad of local chocolate delicacies. Fine dining establishments in Hawaii bestow modern twists of island favorites like macadamia nut-encrusted Mahi Mahi and salads decorated with edible flowers straight from the chef's garden. Food trucks dole out fresh fish tacos while locals crack open young coconuts from the back of their trucks to satisfy thirsty beachgoers.
About: Gillian Parcells
Gillian is a lifelong adventuress and water lover. Raised on endless summers spent camping along the shores of southern California, she was instilled with a deep love and appreciation for simple pleasures at a young age. After graduating from UC Santa Cruz with a degree in Marine Biology, Gillian took to a nomadic lifestyle working and traveling across the South Pacific and Southeast Asia, where a chance meeting with old friends led her to Backroads. What she loves most as a Trip Leader is helping guests connect to landscapes, people, cultures and cuisines so they can get the most from their individual journeys. When she’s not leading Backroads trips, you can find Gillian on a wave, in a hammock with a good book or making homemade pizza.
